Sustainability

Prospect House, Palmer House, Meadows Café and Café 701 are managed by Restaurant Associates (R/A).

At R/A, we see food as an agent to make a difference in the lives of our guests, the health of our planet and the well-being of our communities. We have a long-standing commitment to responsible sourcing, fair food and outreach. Our sustainability platform aligns falls under two pillars: People and Planet.

PEOPLE

Fair Food
Supporting the people who supply our food, we align purchasing wherever possible with suppliers that support human rights.

Quality Sourcing
Prioritizing local ingredients, humanely raised animal products, and sustainable seafood wherever possible.

Community
Reaching out to those near to us to create a more cohesive community and strengthening our bonds.

PLANET

Plant Forward
Infusing the power of plants into everything we make while reducing our consumption of animal products. Better for you and better for the environment.

Food Waste
Committed to reducing food waste in our kitchens and beyond. In 2019, our parent company, Compass, signed on to USDA’s food loss and waste champions group and committed to reducing food waste by 50% by 2030. We utilize a food waste tracking program, Waste Not 2.0, to measure and minimize our food waste.

Food Rescue
Food waste was diverted to pig farms and has evolved over time to our current program where pre-consumer and post-consumer food scraps are hauled to a recycling and renewable energy company in Trenton, NJ that produces biogas, compost, and fertilizer through anaerobic digestion.
